The interesting town of Florina, capital of the Prefecture with the same name, has all the features characteristic of a modern provincial center. Its charm is not overwhelming, one must let oneself be gradually attracted to it. Taking a stroll along the side of the small Sakouleva River, you’ll see many neo-classical and Macedonian architectural-style houses in harmonious succession. This riverside neighborhood was once the historical, commercial, and social center of the city. Visit the local open-air market where you can find all sorts of enticing products, and, if you get tired, sit at any of the many traditional eastern-style cafes to your liking, and taste the local tsipouro accompanied by local “meze,” consisting of roach from the Prespes Lakes and pungent pepper. Tsipouro is elsewhere known as raki, a strong transparent alcoholic drink produced by distillation of pre-fermented grape rests, after they were pressed to deliver their wine producing must.
